Cassie ate when she posted a return to What I Ate Wednesday last week. As it turns out, it's a lot harder to remember to take pictures before chowing down than I expected. I bet that gets easier the more you do it, but my first attempt will not be as polished as some of the other participants.

What I ate Wednesday:
Breakfast: vegetarian omelette with rice bran, bran mix. LOTS of veggies in the omelette.
Lunch: no lunch, didn't have time.
Dinner: Spaghetti sauce served over zucchini (no pasta), a big salad with kale in it, as well as spinach, tomatoes, mushrooms and homemade balsamic vinaigrette, bran mix.
I do not think I had any snacks.

Julie, the best place to eat a pb&j is on the summit of a mountain- nothing ever tasted so good! But sometimes I fall back on it when I don't have any leftovers for lunch.
Mary, I am almost NEVER too busy to eat.
